In Kumamoto, shochu production has a long history of over 500 years, particularly in the Hitoyoshi region. Rice shochu, made only with rice and groundwater from Hitoyoshi Kuma, is one of the few local brands that are known worldwide. Currently, 28 brewers in the region produce this type of shochu.
