“Dago” in Kumamoto dialect means “dumpling”. It is a popular local cuisine made from flour dough that is kneaded into flat dumplings that are boiled with seasonal vegetables and meat and is seasoned with miso or soy sauce. It is prepared in various ways in different regions and households. Please enjoy it with “Takana Rice” which is a flavorful dish prepared by mixing finely-chopped pickled mustard leaves (Takana) with rice.
